Several years ago when I was looking through the cookbook section at a bookstore, one book with the title, “Baking With Less Sugar” caught my eye. Already, I wasn’t a fan of all the sugar called for in some recipes because….well, sometimes…it is a lot. So, I bought the book and tried a few of the recipes.
Then, a few years back when we were planning a birthday party for our twins, I knew I wanted something that wasn’t going to contain a lot of sugar. So, I turned to my cookbook and found a yellow cake recipe!
I modified the recipe for cupcakes, and now modified it again for using einkorn flour!
This is the only cupcake recipe I make now, and my family doesn’t even notice there is half the amount of sugar as regular cupcakes!
Benefits of using einkorn
Einkorn is a type of wheat that has never been modified or hybridized, unlike most other types of wheat. It has stayed the same for generations, and has many health benefits (including easier digestibility) to using it in your baked products!
Some health benefits include einkorn being higher in:
- Iron
- Magnesium
- Protein
- Lutein (which give einkorn its yellow color, but is also beneficial for brain function)
Does einkorn bake differently?
Yes, einkorn bakes a little bit differently than conventional flour.
Einkorn has a weaker gluten content, which means it won’t develop the same elasticity as conventional flour when using it in baking.
When making these cupcakes or any sort of quick bread where you want a lighter texture, einkorn is a dream to work with! Instead of fighting to not develop gluten (which makes for a dense texture), using einkorn helps ensure my product will turn out the way I want.
Some tips I’ve learned in switching recipes to einkorn is:
- Reduce the amount of liquids in the recipe
- Do not over stir or add more flour
- Allow time for the dough or batter to rest
What do I need to make einkorn yellow cupcakes?
To make these einkorn yellow cupcakes, you will need:
- A 12 cup muffin pan
- Cupcake liners (optional)
- A large mixing bowl (I use a Kitchenaid, if you have one)
- Whisk (or whisk attachment)
- Mixing spoon
- Dry & Liquid Measuring Cups
- Measuring Spoons
- Cookie scoop (optional, but I like to use it to put the cupcake batter into the pan)
- Frosting bag & tip (for frosting the cupcakes)
Ingredients
- Einkorn all purpose flour
- Baking powder
- Salt
- Creme fraiche (if you don’t have this, simply mix buttermilk and cream together)
- Eggs
- Granulated Sugar & Powdered Sugar
- Vanilla
- Butter
How do I make einkorn yellow cupcakes?
Preheat oven to 350 degrees, and prepare a muffin tin by greasing it or using liners.
In a large mixing bowl, mix together the einkorn flour, baking powder and salt. Set aside.
In a separate mixing bowl, add the eggs and beat for 1 minute until yolks and whites are mixed together and a little frothy.
Add the sugar and vanilla to the eggs and mix for another 30 seconds – 1 minute to fully incorporate the sugar.
After the sugar is mixed in, slowly incorporate the melted butter into the egg and sugar mixture while mixing.
Once butter is fully incorporated, alternate the flour mixture and liquid by first mixing in about 1/3 of the flour, baking powder and salt mixture.
Mix just until combined.
To the cupcake batter, then mix in 1/2 of the creme fraiche.
Once mixed in, then incorporate another 1/3 of the flour mixture. Continue another time for each alternating, until ingredients are combined.
In the muffin pan, fill each cup to 2/3 of the way full with the cupcake batter.
Bake for 20 – 22 minutes until golden.
Remove the muffins from the muffin tin, and let them cool on a cooling rack.
Finish with buttercream frosting.
For the Buttercream Frosting: In a mixing bowl, combine the powdered sugar and butter together.
Slowly add in the milk, and mix until smooth.
Lastly, add in the salt and vanilla.
Spread on cooled cupcakes and enjoy!
Notes
- If using all purpose flour, increase the creme fraiche to 3/4 c.
- No creme fraiche? Fill the measuring cup with 1/2 c. of heavy cream, and fill the rest with buttermilk or kefir.
