I love the flavor of cinnamon rolls in the morning! There is something special about the warm, spiciness of the cinnamon combined with the sweet flavor of brown sugar that cannot compare to others.
I do not like, however, like the prep it requires for cinnamon rolls in the morning. That is when my sister-in-law introduced me to a cinnamon roll cake!
The recipe that she shared with me though was like an actual cake. It was very sweet and not something I like to feed my family for breakfast!
I loved that it had cinnamon roll flavor and the fact that it was easy to prep. So, I changed the recipe by modifying the sugar amount (and kind!) and incorporated einkorn flour to make it nourishing for my family as they began their day.
This recipe now is a simple, nourishing and delicious breakfast!

Einkorn flour is a great nutritional addition instead of all purpose flour because helps boost immunity, prevents cancer and heart disease because it contains triple the amount of beta-carotene. In addition, since the gluten structure and starch content is different, einkorn can be used by people who have a gluten sensitivity

For the sugar in this recipe, I substituted coconut sugar instead of brown sugar. Coconut sugar is a natural sugar, and a very good sweetener to start your day because it doesn’t spike your blood sugar levels like refined sugar.
The amount of sugar is lowered as well. In this Einkorn Cinnamon Roll Cake, it is sweet enough to enjoy and feel good about eating for breakfast.
Can you substitute coconut sugar for regular sugar?
Yes, you can!
Since coconut sugar can be substituted 1:1 for sugar, you can substitute coconut sugar for white or brown sugar. In this recipe, I substituted the coconut sugar for just the brown sugar in the cinnamon topping because of its naturally brown appearance.
You can, however, also substitute coconut sugar for granulated sugar in the cake itself. I have done this when experimenting with the recipe. There is no difference in taste, but since the coconut sugar is darker than even unrefined cane sugar, the cake will tend to be more darker in color after baking because of the coconut sugar.
Can you substitute all purpose flour for einkorn flour?
Yes, you can! In general, you can use the all purpose flour and einkorn flour 1:1 with a few simple modifications.
The original recipe called for all purpose flour, and I simply swapped it out for einkorn flour. The amount of liquid, if using all purpose flour in this Cinnamon Roll Cake, should be increased to 1 1/2 cups of milk.
Since einkorn flour’s gluten structure is slightly different and weaker, it absorbs liquid slower doesn’t require as much compared to all purpose flour.
What do you need to make Einkorn Cinnamon Roll Cake?
You will need:

- Einkorn Flour
- Salt
- Baking Powder
- Granulated Sugar
- Coconut Sugar
- Milk
- Eggs
- Vanilla
- Butter
- Cinnamon
- Powdered Sugar
How to make Einkorn Cinnamon Roll Cake
Preheat oven to 350 degrees, and prepare a 9 x 13 pan by greasing it.
For the cake: Combine the einkorn flour, salt, baking powder and granulated sugar together in a large mixing bowl.

To the bowl, add in the milk, eggs and vanilla, and mix well to combine.
Slowly add in the melted butter. Once it is all stirred in, the batter will look more glossy like a cake batter.

Pour the cake batter into the prepared 9 x 13 pan.

Cinnamon Topping: Combine the softened butter, coconut sugar, cinnamon and flour together in a mixing bowl.

Once it is mixed together, drop by spoonfuls over the cake batter evenly.

Take a butter knife and swirl the cinnamon topping in. I have found too that sometimes making a grid pattern through the cake batter works better for incorporating the cinnamon topping for me, instead of trying to swirl it in.

Bake the cake in the oven for 28 – 32 minutes, or until a toothpick comes out clean. The edges should be golden brown. If in doubt, insert a toothpick into the center to make sure it comes out clean.

To make the glaze: Combine all the powdered sugar, milk and vanilla in small mixing bowl. This is thick glaze when finished, but don’t add more milk!
Spread over the cake while it is still warm.
Cut into 12 pieces, and enjoy!

Notes
1. To substitute all purpose flour for einkorn flour, simply increase the milk to 1 1/2 cups. The amount of flour remains the same.
2. Want to prepare it ahead of time? Simply prepare the cinnamon roll cake with the cinnamon topping, cover and put in the refrigerator overnight. Take it out of the refrigerator while the oven is preheating, and bake as normal.
3. If the cake batter doesn’t look as “thick” after swirling the cinnamon topping in, leave it sit for 15 – 30 minutes more before baking, covered, to let the einkorn gluten develop more.
4. If using coconut sugar instead of granulated sugar for the cake batter, it will be slightly darker in color.

The delicious taste of a cinnamon roll in a simple einkorn cake that can be eaten for breakfast or dessert.
Ingredients

- 1 1/3 c. milk
- 2 eggs

- 2/3 c. coconut sugar or brown sugar
- 2 T. einkorn flour
- 1 T. cinnamon
Glaze
- 1 c. powdered sugar
- 3 T. milk
- 1/2 tsp. vanilla
