These naturally sweetened Einkorn Breakfast Cookies are great for breakfast, or as a healthy snack. Made with whole wheat einkorn flour and oats, these breakfast cookies are a delicious way to add nutrition into your day!

My husband is a cookie lover, which means I usually make my fair share of cookies for him. His favorite is his grandma’s oatmeal cookie, which he loves to grab as a snack on the go (not just for dessert).
And the only problem is all the sugar his favorite oatmeal cookies calls for.
These breakfast cookies that I modified from his favorite oatmeal cookie are naturally sweetened with coconut sugar and less of it, and made with whole wheat einkorn flour. This makes me feel better about any of my family grabbing a cookie for breakfast!

Can you have cookies for breakfast?
Yes, you can!
Breakfast cookies can be a great option for breakfast because they can be healthier than many conventional cereals or granola bars. These breakfast cookies are made using whole wheat flour, oats and coconut sugar making it a delicious way to incorporate whole grains for breakfast!
They are also easily customizable for people’s preferences. I prefer to add chocolate chips to mine since we enjoy them for a snack as well, but dried fruit, different nut butters and chopped nuts are great additions to breakfast cookies.

Why is coconut sugar healthier?
Coconut sugar is healthier because it is a natural sweetener and also contains minerals for your overall health.
Similar to other natural sweeteners like honey or maple syrup, coconut sugar has a lower glycemic index which means the sugar slowly releases into your body. This is unlike regular sugar (which has a higher glycemic index), and is better for your overall health because it doesn’t affect your blood sugar levels as much.
In addition, when you use coconut sugar as a sweetener, you are also receive minerals for your body! Coconut sugar also contains minerals such as:
- Potassium
- Magnesium
- Iron
- Zinc
Why is einkorn so healthy?
Einkorn is a ancient grain, and has never been modified from it’s original form. As a result, it contains a different gluten structure making it easier to digest. Even people who have gluten sensitivity eat einkorn because of the different gluten structure.
Einkorn wheat also has many more nutrients such as lutein that benefit eye health, and phenolic acids which help your body fight against cancers and heart disease.
Other benefits of einkorn include higher levels of:
- Magnesium
- Zinc
- Protein
- Fiber
Overall, einkorn is a great grain to consume!

What do you need to make breakfast cookies?
You will need:
Ingredients
- Whole wheat Einkorn flour
- Oats
- Baking soda
- Salt
- Peanut Butter
- Banana
- Butter
- Coconut sugar
- Eggs
- Mini chocolate chips (optional)
- Dried fruit (optional)
- Chopped nuts (optional)
How do you make einkorn breakfast cookies?
Preheat your oven to 375 degrees.
In a mixing bowl, combine the einkorn flour, salt and baking soda together. Set aside for later.
In a separate large mixing bowl, cream together the butter and coconut sugar.
Add in the peanut butter, mashed banana, egg and vanilla.

Mix until well combined.

Add in the bowl of dry ingredients that was set aside and mix.

Lastly, add in the rolled oats and chocolate chips (if using).

Stir until all the rolled oats are combined well into the cookie dough.

Using a cookie scoop (or about 2 tablespoons of cookie dough), scoop the cookie dough out of the mixing bowl and place them onto a greased or lined baking sheet in a 3 x 4 pattern for 12 cookies total.


Bake the breakfast cookies in the oven for 12 – 13 minutes, until lightly golden brown.

Remove the cookies from the oven and place on a cooling rack.
When cool, store in a sealed container. Breakfast cookies will last for a week, if not eaten before then!

Notes
- If you aren’t using einkorn flour, simply substitute the same amount of gluten free or all purpose flour in its place.
- If you don’t desire banana in your breakfast cookies, simply omit the banana and substitute it for 2 T. of your favorite nut butter.
- Optional add ins can include nuts or dried fruit.
